KSH 225 Kosher Bread, Rolls and Pastries

Through hands-on learning, students will prepare various kosher breads, rolls and pastries using classic and modern techniques. Students will understand baking technology including: learning the different types of flours, sugars, and yeasts and how the interaction of these ingredients affects the outcome of leavened and unleavened products. The preparation of brioches, breakfast pastries and holiday breads will be included.
