HOS 11000 Introduction to Food Science

Look at the food on your plate or lining the shelves the next time you are at the supermarket. Is it safe and high quality? During this class students will explore the science of foods that includes an overview of the industry, food systems and sustainability, the chemistry of foods, nutrition and digestion, food composition and quality, unit operations, food deterioration, and methods of food preservation. The importance of food safety and regulations is emphasized. The relationship between food and health and wellness will be investigated, including looking at diet.
