GBL 1290 PREPARATORY SEMINAR: CULINARY TRANSFORMATIONS: THE MAKING OF A MEAL

This course helps prepare students academically, inter-culturally, linguistically, and logistically for their short-term global experience. Additionally, we will study the foundational concepts of chemistry as it applies to one of the most essential realities of the human experience: food and its preparation within a cultural context.  The seminar is offered on campus in the semester prior to the 4 sh global engagement experience. Completion of the pre-departure preparatory seminar is required for participation in CHM 1310 IS.

  1. Students will investigate and contextualize the chemistry behind food and cooking.
  2. Students will investigate, evaluate, and present the science behind cooking in their own life and in the society in which they live.

  5. Students will understand the multiple dimensions of human experience within and across cultures and environments.
