CUL 130 Principles of Baking*

Principles of Baking is an introduction to baking theory, standard bakeshop measurements and math, and the proper use of bakeshop equipment. Topics include cookies, basic doughs, and desserts.

2 hours lecture, 2 hours laboratory.
